No guilt Fritters!!!
Quinoa is the only grain that is a complete protein and very little oil is used to fry them so they make a very healthy yet tasty snack.
Makes 12-14 cakes
3 cups cooked quinoa (1 cup uncooked)
1/3 cup parmesan cheese
1 red bell pepper, chopped
1/2 cup scallion, thinly sliced
2 eggs
1/3 c flour
1 t turmeric (or curry if you prefer the flavor)
salt and freshly ground pepper to taste
(Optional: add 1 c drained black beans)
AIOLI
1/2 cup mayonaise
1-2 cloves raw garlic or a head of roasted
1 lemon, juiced
Fresh pepper
DIRECTIONS:
Mix all the ingredients for the cakes and let sit for five minutes. Form in balls and mold together with your hands. If they are too dry, add a little stock for moisture.
Put 1 T olive oil mixed with 1 T Canola in a saute pan on medium low heat. (O.O. gives the flavor and Canola can handle a high temperature) Fry cakes 4-5 minutes a side until brown.
Blend all the aioli ingredients with a hand-held blender or food processor and serve on the side.
Serve warm or at room temperature. Leftovers make great snacks to go!
