Artichoke Arugula and Feta Crustless Quiche

Makes 8 servings

6 eggs
4 oz feta (or goat cheese)
10 oz artichoke hearts (fresh or frozen)
1/2 cup chopped onion
1/2 cup shredded mozzarella
2 cups fresh arugula (Kale or spinach optional)
Salt and pepper

1. Preheat oven to 350 F and spray pie dish with olive oil or Pam
2. Sauté onion 5 minutes then add artichokes and arugula til wilted
3. Place mixture in the bottom of pie plate
4. Add crumble feta as next layer
5. Add beaten eggs on top of feta
6. Sprinkle top with mozzarella
7. Bake for 20-25 minutes or until top is browned
